"Carlo Fenocchio favours long fermentations and prolonged ageing in casks for his traditional Barolos. This Riserva is named after the process of submerging the cap for 90 days to extract more color, flavor and tannin from the skins. There's some slight evolution, but not oxidation, on the nose, with tobacco, tar, and red fruit as well as a rose petal note. The attack is juicy, broad and succulent, leading to a palate that's very concentrated and dense. It's weighty and structured but not heavy-handed, thanks to the acidity on the long finish."
