Winemaker Notes: 

"Fresh nose of sea breeze, green apple, Asian pear and lemon zest with mouthwatering acidity with oyster shell minerality on the palate.   Fruit was harvested overnight when the air is coolest and delivered to the winery early in the morning. The grapes were whole cluster pressed to a combination of concrete eggs and stainless steel where they underwent spontaneous fermentation and eventual sur lie élevage."
