Winemaker Notes: 

"Bright and structured, with notes of violet, dried red cherry, watermelon rind, pomegranate juice, and pink peppercorns. 

The grapes were harvested on September 11, 2021. We fermented them 100% whole cluster to balance the inherent fruitiness of Nero d’Avola and build structure. We began the fermentation with gentle pump-overs to maintain aromatic intensity, before switching to punch-downs later in fermentation to dial-in tannin extraction."
