Winemaker Notes: 

Balanced bubbles with cutting crispness,  Notes of strawberry, ripe pear and apple.  The "Pet-Nat" follows the Ancestral Method, and is bottled without added sugar or yeast. Fermentation is paused mid-way for bottling, allowing the fermentation process to finish in the bottle with no disgorgement or dosage."
