Winemaker Notes: 

"Fabio: "The sugar is so you can drink this in the morning and fight a shark."  The grapes are destemmed and macerated for four to twelve hours. Fermentation and aging is in demijohn and homemade porcelain jars for three months. Intentionally bottled with residual sugar so this wine is lightly sparkling."
