Winemaker Notes:
"The grapes were hand Hand picked then pressed and fermented separately in neutral oak barrels with the exception of the Pinot Noir, Chardonnay, and 1% of the Riesling which were co-fermented as a red wine and then barreled down once dry. After malolactic and a brief aging on fermentation lees, all seven barrels were blended together and force carbonated to 4.5 bars of pressure. The resulting sparkling wine holds a bubble for days. I dedicate this wine to my wife, Jocelyn. She is my favorite person to drink pink bubbles with under the sun."
