2021 Lares "Disco Made Me Do It"

Winemaker Notes: 

"Until now, all of my work blending wine and cider has been towards sparkling production so I wanted to see what happened when the intention was to make a serious still wine. The Pinot Noir was organically farmed from the Gillirose vineyard in Elkton and pressed down there to ensure it did not take on much if any color. The organic apples were grown and pressed in Hood River, Oregon. Separately barrel fermented, the Pinot saw 30% "new" wood in ReNew barrels (ask me about this, I’m super into it.)" 

Alcohol: 10.7%
