Winemaker Notes: 

"Ample and generous chenin, balanced by a vibrant minerality, the light maceration gives it structure.   After pressing, the juice is pumped into two 25hl tuns, in one the juice ferments alone, and in the other it ferments and macerates with 10% of destemmed grapes. After 6 months the vats are assembled and the marc distilled (Ronaldignôle)."
