"The 2020 Blanc de Noirs Les Ursules is classy, elegant and supremely polished. Sweet floral and spice notes open first, followed by a burst of red-toned Pinot fruit. Rose petal, cinnamon, dried cherry, mint and orange peel develop, filling out the layers in style. Readers will have a hard time keeping their hands off of this. No dosage. Disgorged: April 2024."

"This pristine Blanc de Noirs from Les Ursules, a tiny 34-year-old vineyard, is a perfect example of Cédric Bouchard's meticulous attention to detail. Unfined, unfiltered and aged for 28 months, the wine showcases multiple layers of flavor, including green apple, ripe pear, jasmine and minerals, all with an ethereal and uplifting finish. The grapes were hand-harvested and pressed using only the first press juice, which was then vinified with indigenous yeasts in stainless steel barrels. Les Ursules is proudly non-dosé."
