Tasting Note:

"Château de Fosse-Sèche Arcane Saumur Blanc is a charming dry wine, with aromas of flowers and honey. It has a good storage ageing potential, up to 15 years if kept in optimal conditions."

About the Producer:

"Château de Fosse-Sèche was owned by the church for centuries. The monks settled there for the first time in the thirteenth century, and began to cultivate the nearby vines. The winery currently cultivates 8 hectares of Cabernet Franc vines organically, 1 of Cabernet Sauvignon, 5.5 of Chenin and 0.5 of Chardonnay. Today their wines can be found in many restaurants with Michelin stars."

Vineyards, Farming & Climate:

"The vineyards for Château de Fosse-Sèche Arcane Saumur Blanc are between 5 and 15 years old. They are found on a plateau that originated in the Jurassic period, with a stony structure and gravels bound together by a slightly clayey soil. It is a temperate zone with oceanic influence. The climate there favours slow, progressive and balanced ripening. The vineyards are certified as organic and biodynamic and have an average yield of 30 hectolitres per hectare."

Winemaking:

"Château de Fosse-Sèche Arcane Saumur Blanc is the result of a manual selection of the winery’s best Chenin Blanc. The must ferments spontaneously, without added commercial yeasts, at a low temperature, to preserve and achieve fruity and fresh aromas. Then it ages on its total lees for 9 months in French oak barrels."
