"Pale red in color; aromas and flavors of fraises do bois, herbs, and orange peel. This is a very versatile red wine, particularly in warmer weather; great with cured meats (especially the Tyrolean specialty, Speck), pizza; or grilled chicken, pork, or salmon. Best drunk at cellar temperature, or after 30 minutes in the fridge."
About the Producer:
"Weingut Niklas is a small winery located in the village of Saint Nikolaus, close to Lake Caldaro (aka Kalterersee, in the German version). Dieter Sölva has taken over from his father Josef in producing delicious wines of varietal purity, and is now assisted by his son Michael in his efforts to preserve and further the local winemaking traditions. Dieter main goal as a winemaker is to let the variety’s character and unique traits shine. To do so, he ferments his Schiava exclusively with native yeasts and in stainless steel. No oak is used to age the fine, as not to cover the original aromas of this unique grape."
