Here is our second exclusive batch from Tres Tiempos, a wild agave called Tobala wherein the distillers employed a special harvesting technique called "capon." They wait until the agave sends up a stalk, indicating it will soon reproduce and die, however, they interrupt the process by cutting the stalk. The plant goes into a stasis, where it keeps generating sugar and can remain in that state under the careful watch of the distiller, as it is more vulnerable to pests and disease. The plant can remain this way for a few years. This process results in a richer, sweeter mezcal.
This Tobala Capon is a truly special batch. Upon opening the bottle you will note some minerality and brininess, giving way to white pepper and a creamy, earthy sweetness.
