This is one of 8 barrels in the Rare Bird collection from Subtle Spirits. This one is named Cardinal, after the state bird of Kentucky. Many of you will recognize the mash bill of this barrel. 75% Corn, 13% Rye, 12%. Malted Barley and lucky for you, it’s here just in time for TURKEY Day! See a theme building here?
This is a beast like no other you’ve had from this venerable distillery. Aged over 16 years and bottled at 115.6 proof, which is very close to its original entry proof. The fact it’s not over oaked and dry, makes me think it spent its life on the first or second floor of the rickhouse.
Like I said, this is a beast and packs a punch. Super complex nose and taste, very oily mouth feel, and super long finish.

This ranks right up there with those heavy hitters. Now keep in mind, those bottles are nearly impossible to come by, but Bottle Barn has 120 bottles of the Cardinal
Nose:
Cooked stone fruit. Especially peaches and cherries, Kumquat
Spices - cinnamon, clove, nutmeg, black pepper, Tobacco,
Leather -baseball glove, Sweet oak, Black tea, Dark honey - buckwheat
Taste:
Sweet tea, Mixed berry compote, Dried currants , Bit-O-Honey candy
Toasted almonds, Grape Fun Dip candy
Finish:
Extra-long, Clove, Black pepper, Oak char
