"Delphine Vesselle’s father developed this wine, looking back to the time when it took much longer for grapes to be carried from vineyard to press, and the color from pinot noir skins would begin to bleed into the juice of the grapes. Now, Vesselle macerates her pinot noir for less than a day, making this not quite a rosé—it’s the color of pink gold—yet it picks up some of the grape-skin tannins and notes of pomme de terre and white tea. There’s a floral red-apple tone and a darker cèpe-like tone, the wine rich enough for scallops over a buttery risotto."

"Pale pink in color, this shows an expressive mix of passion fruit, white cherry, blood orange zest and dried thyme notes riding the lively mousse and backed by racy acidity. Zesty."
Winemaker Notes:
"The orange-pink color of this "eye of the partridge" Pinot Noir-based wine historically was the hue of most Champagne made in Bouzy in the nineteenth century. (The wine’s singular hue is like the color of a partridge’s eye.) Pinot Noir grapes are macerated briefly to extract color then pressed. Pink roses, lavender, wild strawberry and pomegranate.
Aromas of red roses, orange zest, white pepper, light herbs. Medium-bodied yet light on the tongue; elegant, silky and balanced. Red berries, stone fruits, peppery finish."
