"The Pet Nat is dry with supple, edginess and gorgeous nuance. Soft white stone fruit with pronounced minerality amid notes of golden apple and a fun fizz. Refreshing. Skin fermented (native yeasts) for 3 days in stainless steel before racking into a large used oak cask. No SO2 during harvest or fermentation. Bottled in April of 2020. 2.5 ATM of pressure. 15ppm SO2 in total added."
