Distiller Notes: 

"El Buho Especial Jabali is made with the wild maguey Jabali in Santiago Matatlan. This agave is tough to work with and many mezcaleros won’t touch it because it foams and expands during distillation, which can be dangerous for the stills. That danger, however, is accompanied by exceptional flavor and profile. This mezcal is only released in incredibly small batches."

"A velvety and bright expression, the Jabali has strong baking spice on the nose with light citric notes. White pepper, cinnamon, and lime all interplay to create a tannic and chocolatey spirit."
