"A hazy pink in the glass, this bottling goes down like a cold soda on a hot beach, starting with generous aromas of cherry, baked pastry, chalk and cola. There's a hearty mousse to the palate, which is packed with strawberry flavors and a plaster of Paris minerality."
Winemaker Notes:
"This wine is a Rose of Pinot Noir made in the Methode Ancestrale tradition from the Topotero Vineyard, located in Avila Beach in San Luis Obispo County. The vineyard is farmed practicing organic on a home ranch just over a mile from the Pacific Ocean. The wine was whole cluster pressed and then fermented in neutral french oak barrels with native yeast. The wine was bottled at the very end of fermentation to capture the natural bubbles in the bottle. The wine aged on lees in bottle before being riddled, disgorged, corked and caged, all by hand."
