"These grapes were harvested on the night of August 28, 2022. They were brought directly to the winery and gently pressed before sunrise. The cool juice was moved to a stainless steel tank where native fermentation began three days later. The wine was cold crashed and racked before bottling was done by hand. No sulfur or fining agents were added at any stage during the production. It was aged in bottle for 4 months before being released without disgorgement."
