"Louis Moreau farms 8.8 acres of chardonnay in Vaillons—parcels assembled since 1945, including some vines planted that year and others from the 1970s. Their holdings yield a wine with quiet depths and a warm, regal, hazelnut-scented finish. That nuttiness develops with the aging of lees from an indigenous yeast fermentation, all of it taking place in stainless steel."
