"The 2021 Chablis L’Humeur du Temps is a blend of all of de Moor’s Chablis parcels due to the depleted crops raised in both fourdes and used barrels.  Two bottles were tasted.  The first exhibited some toffee-ish scents on the nose.  The second is fresher with pretty orange rind and quince aromas and a touch of sea spray.  The well-balanced palate is lively and spicy, with a crisp line of acidity.  There’s plenty of energy here with a saline finish that gets the saliva flowing.  Wonderful."
