"This cuvée originates from a plot recently purchased by the estate, and is in the process of achieving organic certification. Aging occurs for three years in demi-muids, then bottling involves no fining or filtration, and, as is standard, no sulphur. Les Varrons has a pale gold robe, with aromas of peach, quince and citrus, and a hint of salinity. The mineral filled palate extends into a long finish. The wine is recommended for some time in cellar storage."
